Cooking Direction

Preparation: Wash the meat thoroughly and drain. Fry chopped onions in 10 tablespoons of oil until brown. Remove one-third of the fried onions, let them cool, mix with sugar and grind. In the remaining fried onions, add the meat, ginger paste, garlic paste, sour yoghurt, 1 cup of milk, Pran Biriyani Masala and salt to taste. Cook over medium heat for 8–10 minutes.

Peel and cut the potatoes into large pieces, wash and lightly salt them. Heat 1 tablespoon of oil and fry the potatoes over medium heat until cooked. Wash and drain the rice.

Cooking: Heat 5 tablespoons of oil in a pot and add the rice. Fry over medium heat for 4–5 minutes. Add the remaining 1 cup of milk and 1 litre of water for new rice or 1.25 litres for aged rice. Cover and cook over high heat for 2–3 minutes. Once the water on top has dried, mix in the prepared meat.

Spread the ground fried onions, fried potatoes, green chillies, pistachios, dried plums, raisins, rose water and ghee over the rice. Cover and cook on very low heat for 15–20 minutes. During this time, gently shake the covered pot 2–3 times to mix the layers.

Serving: Mix the biriyani well and serve hot with sliced cucumber, onion rings and lemon.
